Whoa. Not only can you wash mushrooms with no adverse effects, soaking and crowding them in the pan produces better results!

The short version: much like when frying, the water steaming out prevents the oil from being absorbed by the mushroom. Voila: less oily, cleaner tasting mushrooms.
